Preparation Method :
- Put the capsicum, pasta sauce and chopped thyme in a bowl and mix well.
- Melt half the butter in a large non-stick frying pan over high heat and cook the fish for 1 minute, adding the remaining butter as you go.
- Turn the fish over and pour on the capsicum mixture. Simmer for 10 minutes, or until the fish is cooked.
- Season to taste and garnish with thyme sprigs. Serve with roasted potato slices and crusty bread to soak up the juices.

- 1 small red capsicum (pepper), thinly sliced
- 250 grams tomato pasta sauce
- 1 tablespoon chopped thyme
- 40 grams butter
- 800 grams skinless perch or snapper fillets
- Thyme sprigs, to garnish
