SCALLOPS IN BLACK BEAN SAUCE

Preparation Method :
- Heat 1 tablespoon of the oil in a wok and swirl to coat the side. Add the scallops and cook for 2 minutes, or until firm. Remove to a plate.
- Mix together the soy sauce, rice wine and sugar in a cup with a tablespoon of water and set aside.
- Add the remaining oil to the wok and heat until it is beginning to smoke. Add the garlic, spring onion and ginger. Cook for 30 seconds.
- Add the beans and the soy sauce mixture and bring to the boil. Return the scallops to the sauce with the sesame oil and allow to simmer for about 30 seconds.
- Serve immediately with rice and steamed Asian greens.
INGREDIENTS
- 2 tablespoons Cooking oil
- 24 scallops, without roe, membrane removed
- 1 tablespoon soy sauce
- 2 tablespoons Chinese rice wine
- 1 teaspoon sugar
- 1 garlic clove, finely chopped
- 1 spring onion (scallion), finely chopped
- ½ teaspoon finely grated fresh ginger
- 1 tablespoon salted, fermented black beans, rinsed and drained
- 1 teaspoon sesame oil
