SCALLOP BROCHETTES
A very creative dish that you can proudly present on your special occasion, Scallop Brochettes is highly made of healthy ingredients like black pepper, lime juice, bay leaves, and olive oil. This dish will give you memorable and high class taste.

Preparation Method :
- Cut the white flesh of the scallops into quarters. Keep the pink coral whole.
- Marinate in the lime juice and tarragon, seasoned well with salt and pepper, for up to 2 hours.
- Skewer 8 scallop quarters and 2 corals on each of 8 wooden kebab sticks, retaining the marinade for the dressing.
- Make a dressing by mixing the oil, marinade and mango in a screw-topped jar. Shake well and season to taste.
- Put the wine, sprigs of tarragon, bay leaves and water into a saucepan. Place the kebabs in a steamer above the pan, cover with a tight-fitting lid and cook for 3 minutes.
- Arrange 2 kebabs on each of 4 plates, spoon on plenty of lime and mango dressing.
- Garnish with sprigs of tarragon and slices of mango and lime, if wished.
- Serve immediately.
INGREDIENTS
- 25 large scallops, dark beards removed
- Juice of 4 limes
- 4 teaspoons chopped tarragon
- Salt
- Freshly ground black pepper
- 10 tablespoons cooking oil
- 2 mango, peeled, stoned and diced
- 500 ml white wine
- 8 tarragon sprigs
- 4 bay leaves
- 300 ml water

- Mango slices
- Lime slices
