PEPPERED SCALLOPS

Do you want to impress your friend through cooking a high class food? Why not try the Peppered scallops? This is one of the highly-sophisticated recipes that are now popular dish all over the world. Choose this dish and you will surely impress your friends.

Preparation Method :

  • Mix together the oil, lemon juice, ginger and garlic, and season well with salt and pepper.
  • Remove the pink coral whole from the scallop shells. Cut the white flesh in two. Marinate in the oil and lemon mixture for up to 2 hours.
  • Meanwhile, make the dressing. Place all the ingredients in a screw-topped jar and shake well. Taste and adjust the seasoning, if necessary.
  • Put the stock and any remaining marinade in the base of a steamer. Arrange the mixed peppers in the steaming compartment with the scallops on top.
  • Cover with a tight-fitting lid and cook for 3 minutes. Remove the scallops, toss in the dressing and keep warm. Add the peppers to the stock. Boil to reduce until syrupy.
  • Reduce the heat and whisk in the margarine, bit by bit, until you have a creamy sauce. Check the seasoning.
  • Flood 4 individual plates with the mixed pepper sauce. Arrange the scallops on-top and sprinkle with sesame seeds.
  • Serve immediately. 

INGREDIENTS

  • 4 tablespoons sesame oil
  • Juice of 2 lemons
  • 30 grams fresh root ginger, peeled and grated 
  • 2 large clove garlic, peeled and crushed 
  • Salt
  • Freshly ground black pepper 
  • 25 large scallops, dark beards removed
  • 500 ml fish stock
  • 2 red pepper, cored, deseeded and finely chopped
  • 2 green pepper, cored, deseeded and finely chopped
  • 2 yellow pepper, cored, deseeded and finely- chopped
  • 2 tablespoon sesame seeds, to garnish

Dressing

  • 6 tablespoons sesame oil
  • 2 tablespoon lemon juice 
  • 2 shallot, finely chopped
  • 2 tablespoon soy sauce 
  • 250 grams margarine
