PEPPERED SCALLOPS

- Mix together the oil, lemon juice, ginger and garlic, and season well with salt and pepper.
- Remove the pink coral whole from the scallop shells. Cut the white flesh in two. Marinate in the oil and lemon mixture for up to 2 hours.
- Meanwhile, make the dressing. Place all the ingredients in a screw-topped jar and shake well. Taste and adjust the seasoning, if necessary.
- Put the stock and any remaining marinade in the base of a steamer. Arrange the mixed peppers in the steaming compartment with the scallops on top.
- Cover with a tight-fitting lid and cook for 3 minutes. Remove the scallops, toss in the dressing and keep warm. Add the peppers to the stock. Boil to reduce until syrupy.
- Reduce the heat and whisk in the margarine, bit by bit, until you have a creamy sauce. Check the seasoning.
- Flood 4 individual plates with the mixed pepper sauce. Arrange the scallops on-top and sprinkle with sesame seeds.
- Serve immediately.
INGREDIENTS
- 4 tablespoons sesame oil
- Juice of 2 lemons
- 30 grams fresh root ginger, peeled and grated
- 2 large clove garlic, peeled and crushed
- Salt
- Freshly ground black pepper
- 25 large scallops, dark beards removed
- 500 ml fish stock
- 2 red pepper, cored, deseeded and finely chopped
- 2 green pepper, cored, deseeded and finely chopped
- 2 yellow pepper, cored, deseeded and finely- chopped
- 2 tablespoon sesame seeds, to garnish
Dressing
- 6 tablespoons sesame oil
- 2 tablespoon lemon juice
- 2 shallot, finely chopped
- 2 tablespoon soy sauce
- 250 grams margarine
