FRIED FISH WITH SALAD

Preparation Method :

  • Heat the oil in a deep fry pan. Mix the flour, cayenne pepper, salt and pepper in a mixing bowl.
  • Arrange the fish in a large, shallow dish and toss well in the flour mixture.
  • Deep fry the fish in batches for about 2-3 minutes or until crisp and golden. Keep the cooked fish warm while deep frying the remaining fish.
  • The Salad: Arrange the rocket leaves, cherry tomatoes and cucumber on individual serving dishes.
  • Whisk the olive oil and the remaining ingredients together and season lightly. Drizzle the dressing over the salad and serve with the whitebait.

INGREDIENTS

  • 500 grams whitebait, fresh
  • Cooking oil, for frying
  • 100 grams plain flour
  • ½ teaspoon of cayenne pepper
  • Salt and freshly ground black pepper, to taste

The Salad

  • 150 grams cherry tomatoes, halved
  • 100 grams cucumber, cut into dice
  • 100 grams rocket leaves
  • ½ teaspoon Dijon mustard
  • 50 ml olive oil
  • 4 teaspoon fresh lemon juice
  • ½ teaspoon castor sugar
