SALMON WITH EGG-FRIED RICE

Preparing salmon with egg fried rice is never been so tough. You can have this dish instantly as long as you set up its basic ingredients like skinless salmon fillet, red pepper, clear honey, frozen peas, basmati rice and other essential flavorings.

Cooking Time :
30 minutes

Preparation Method :

  • Cut the salmon into 2 pieces and place in a shallow dish.
  • Mix together the honey and soy sauce and brush over the salmon. Leave for 10 minutes.
  • Heat 2 teaspoons of the oil and cook the carrot for about 5 minutes.
  • Add the peas and pepper and cook for a further 5 minutes until soft.
  • Add the beaten egg and cook over a gentle heat, stirring and breaking up the egg into little pieces.
  • Add the cooked rice and heat through for a few minutes.
  • Heat the remaining oil in a small frying pan and cook the salmon for 2-3 minutes on each side.
  • Alternatively, cook the fish under the grill. Stir the spring onion into the rice.
  • Serve the salmon on a bed of spinach accompanied by the egg-fried rice.

INGREDIENTS

  • 300 grams skinless salmon fillet
  • 4 teaspoon clear honey
  • 2 tablespoon light soy sauce
  • 5 teaspoon Cooking oil
  • 2 small carrot, finely chopped
  • 4 tablespoon frozen peas
  • 3 red pepper, deseeded and chopped
  • 2 eggs, beaten
  • 100 grams basmati rice, cooked
  • 2 spring onion, finely sliced
  • Lightly cooked spinach or pak choi, to serve
