SHRIMPS IN COCONUT

Preparation Method :
- Heat oil in a wok. Saute mustard seeds until they crackle. Add curry leaves, garlic slivers and chopped onions. Stir-fry till the onions are smooth.
- Stir in all the other ingredients except coconut milk. Cook till the oil separates and appears on the surface. Add water as and when necessary to cook the curry.
- Add the coconut milk along with the shrimps. Stir- fry till the shrimps are cooked and the curry has thickened. Remove from heat and Serve hot with roti.
INGREDIENTS
- 500 grams Shrimps, peeled
- 75 ml Cooking oil
- ½ teaspoon Mustard seeds
- 2 Curry leaves
- 2 teaspoon Garlic, slivered
- 1 teaspoon Coriander powder
- 1 teaspoon Red chili powder
- ½ teaspoon Turmeric powder
- 1 Coconut, fresh, grated
- 2 teaspoon Cumin, whole
- 200 ml Coconut milk
- 4 Onions, chopped
- 1 Green chili, chopped
- Salt to taste
