Preparation Method :
- Heat the oil in a wok and stir-fry the prawns for 5 minutes. Set the prawns aside.
- Reheat the oil and add the ginger and garlic. Stir quickly, then add the onions, leek and peas. Stir-fry for 5 minutes.
- Add the bean sprouts and prawns to the cooked vegetables. Stir in the soy sauce, sugar and salt and cook for 2 minutes. Serve immediately.

- 2 tablespoons sesame oil
- 1 kg peeled prawns
- 1-inch piece fresh root ginger, peeled and finely chopped
- 4 cloves of garlic, peeled and finely chopped
- 5 spring onions, chopped
- 2 leek, white part only, cut into strips
- 200 grams peas, shelled
- 200 grams bean sprouts
- 4 tablespoons dark soy sauce
- 2 teaspoon sugar
