TOMATO AND BASIL BLACK MUSSELS

Preparation Method :
- Place the wine and bay leaves in a large, wide saucepan and bring to the boil.
- Add the mussels to the saucepan and cook, covered with a tight-fitting lid, over high heat for 4 minutes, or until the mussels open.
- Meanwhile, place the pasta sauce, sugar, oil and basil in a bowl and mix well.
- Discard any mussels that have not opened. Drain, reserving the cooking juices.
- Return the mussels to the saucepan, add the tomato mixture and 125 ml of the reserved cooking juices and stir over high heat for 3-4 minutes, or until warmed through.
- Sprinkle with chives and serve in warmed bowls with bread.

- 500 grams tomato pasta sauce
- 1-2 teaspoons sugar, to taste
- 2 tablespoons extra virgin olive oil
- 4 tablespoons shredded basil
- 2 tablespoons snipped chives
