COD AND PINEAPPLE KEBABS

Cod and Pineapple Kebabs is such an appetizing dish that you’ve been waiting for! Don’t hesitate into preparing this dish that will serve you on purpose! It is so good to please your family with this certain dish so that they can at least try something new!

30 minutes

Cooking Time :
45 minutes

Preparation Method :

  • Drain the pineapple, reserving 4 tablespoons of the liquid. Mix the reserved liquid with the soy sauce, sherry, ginger, mustard and garlic in a shallow dish.
  • Add die fish cubes and turn to coat. Cover and leave to marinate for at least an hour.
  • Drain the fish cubes, reserving the marinade. Thread the fish cubes, pineapple and green pepper on to skewers.
  • Cook under a preheated grill 5 inches from the source of heat, for 10 minutes, or until the fish flakes easily when tested with a fork.
  • Turn and baste with the marinade during cooking.
  • Serve hot with rice.

INGREDIENTS

  • 500 grams pineapple chunks 
  • 200 ml light soy sauce 
  • 8 tablespoons dry sherry
  • 2 tablespoon grated fresh root ginger 
  • 2 teaspoon dry mustard 
  • 2 clove garlic, peeled and crushed 
  • 2 kilogram cod, cut into 1 inch cubes 
  • 2 green pepper, cored, deseeded and cut into 1 inch squares
