Preparation Method :
- Blanch the beans in a small saucepan of boiling water for 2 minutes. Drain and refresh under cold water, then set aside.
- Heat a wok until very hot, add the oil and swirl to coat the side.
- Stir-fry the tuna in batches for about 5 minutes each batch, or until cooked on the outside but still a little pink on the inside.
- Add the cherry tomatoes, olives and beans to the wok, then gently toss until heated through.
- Add the lemon juice, garlic and anchovies and stir well.
- Season to taste with salt and freshly ground black pepper. Serve scattered with the basil leaves.
INGREDIENTS
- 300 grams small green beans, trimmed
- 2 tablespoons Cooking oil
- 600 grams piece of tuna, cut into bite-sized cubes
- 250 grams small cherry tomatoes
- 16 small black olives
- 2-3 tablespoons lemon juice
- 2 garlic cloves, finely chopped
- 8 anchovy fillets, rinsed, dried and finely chopped
- 3 tablespoons small basil leaves
