Preparation Method :
- Mix together the flour, salt and pepper and use to coat the trout. Heat the oil in a heavy trying pan, add the fish and fry for 10 minutes on each side until golden brown.
- Place on a warmed serving dish and keep hot.
- Wipe the frying pan with kitchen paper. Add the margarine and cook until golden.
- Quickly add the lemon juice, herbs, and salt and pepper to taste.
- Pour over the trout and serve immediately.

- 8 tablespoons whole meal flour
- 1 teaspoon salt
- 1 teaspoon pepper
- 8 trout, cleaned
- 6 tablespoons Cooking oil
Sauce
- 50 grams margarine
- Juice of 1 lemon
- 2 tablespoon chopped mixed herbs
- Salt
- Freshly ground black pepper
