TROUT WITH HAZELNUTS

- Wash the trout, pat them dry with kitchen paper towels and season them inside and out with salt and pepper. Just before cooking, roll the trout in the flour and nutmeg, coating them evenly.
- Heat the oil and margarine in a large, heavy frying pan and. when the margarine ceases to foam, put in the trout and cook gently for 12 to 15 minutes, turning carefully halfway through cooking.
- Meanwhile, spread the hazelnuts in the grill pan and toast them gently for a few minutes until the skins burst. Rub the nuts in a rough cloth to remove the skins, and then chop them coarsely.
- When the fish are cooked through and golden, lift them out carefully; arrange them side by side on a hot serving dish and keep hot.
- Add the remaining margarine to the fat remaining in the frying pan. When the margarine is hot, add the nuts and enough breadcrumbs to absorb all the fat.
- Fry fairly briskly, stirring, until golden brown and crisp. Stir in the chives or parsley with a little salt and pepper, and scatter immediately over the trout.
- Arrange the trout on individual, warmed serving plates and garnish with lemon wedges.
- Serve with a crisp green salad and new potatoes.

- 250 grams trout, cleaned, heads and tails left on, tins removed
- Salt
- Freshly ground black pepper
- Flour for coating
- Good pinch of ground nutmeg
- 2 tablespoon Cooking oil
- 150 grams margarine
- 150 grams hazelnuts
- 8 tablespoons dry whole meal breadcrumbs
- 4 tablespoons snipped chives or chopped parsley
- 2 lemons, quartered, to garnish
