SMOKED TROUT WITH HORSERADISH SAUCE

- First skin the trout: run a knife down the centre of each side and lift the two halves off the bone, turn over and repeat on the other side. Skin the other fish. You will have 8 small fillets.
- Whip the cream until stiff, then fold in the horseradish.
- Add salt and pepper to taste, taking into account the Smokey flavor of the trout. Arrange the fillets on the lettuce and garnish with olives and lemon.
