GREY MULLET WITH PIQUANT TOMATO SAUCE

The Grey Mullet with Piquant Tomato Sauce is healthy dish that is very popular for dieters. This recipe can help you to reduce weight and maintain your health at the same. So, you have to prepare this delectable dish every day.

Preparation Method :

  • Rinse the fish under cold water and remove any remaining blood from the backbone.
  • Season well with salt and pepper. Place the fish in a shallow- dish with the vinegar, oil and parsley.
  • Marinate for 3 hours or overnight if possible, turning occasionally.
  • 04Meanwhile, make the sauce: heat the oil in a saucepan and fry the shallot and pepper until cooked but not brown.
  • Stir in the tomatoes, capers and stock. Season well with salt and pepper. Bring to the boil.
  • Discard the marinade, place the fish in a steamer and cover with a tight-fitting lid.
  • Steam over the sauce for 20 minutes. Check the liquid level frequently and add boiling water if necessary.
  • Remove the fish from the steamer, peel away the skin and keep warm. Puree the sauce in a blender or food processor until smooth.
  • To serve, flood a warmed serving dish with half the sauce.
  • Lay the fish gently on top and spoon on the remaining sauce.

INGREDIENTS

  • 2 kilograms grey mullet, cleaned and thoroughly scaled
  • Freshly ground black pepper 
  • 4 tablespoons white wine vinegar 
  • 4 tablespoons Cooking oil
  • Parsley sprigs 

Tomato sauce

  • 2 tablespoon olive oil 
  • 4 shallots, peeled and finely chopped 
  • 2 large yellow pepper, cored, deseeded and roughly chopped
  • 1 kilogram chopped tomatoes 
  • 2 teaspoon capers, rinsed 
  • 500 ml fish stock 
  • Salt
  • Freshly ground black pepper
