BLACKENED SNAPPER

Cooking Time :
15 minutes

Preparation Method :

  • Brush each fish fillet liberally with the melted butter.
  • Combine the Cajun spice mix and paprika, then sprinkle thickly over the fish. Use your fingers to rub the spice mix evenly over the fillets.
  • Heat a large frying pan over high heat. Cook two fillets at a time in the pan for 1-3 minutes on one side.
  • Turn and cook for another few minutes, or until the fish is cooked and flakes easily.
  • The surface should be well charred on each side. Add extra butter if necessary.
  • Serve drizzled with any remaining melted butter and lemon wedges- they can be served lightly charred if you like. 

INGREDIENTS

  • 6 large skinless snapper fillets, 2 cm (¾ inch) thick
  • 150 grams unsalted butter, melted
  • 2 tablespoons Cajun spice mix
  • 2 teaspoons sweet paprika
  • Lemon slices, to serve
