SALMON CAKES WITH HERB MAYONNAISE

Preparation Method :

Combine water, wine, celery, carrot and peppercorns in large pan, bring to boil reduce heat; add salmon.
Cook gently uncovered, about 10 minutes or until salmon is tender; drain on absorbent paper Strain and reserve liquid; discard pulp.
Cut potatoes into 1cm cubes. Place reserved liquid in pan, add saffron a potatoes, simmer, uncovered, about minutes or until potatoes are tender; drain cool.
Mash two-thirds of the potato. Remove skin and bones from salmon flake salmon gently into small pieces combine all potatoes, salmon, shallots, garlic and capers in bowl; mix well.
Divide mixture into 8 portions; shape into 8cm cakes.
Gently toss cakes in flour shake away excess flour.
Dip into eggs then combined breadcrumbs and nuts. Refrigerate 30 minutes.
Heat butter and oil in pan, add salmon cakes, cook, turning once, until well browned.
Serve with herb mayonnaise.

Herb Mayonnaise:

Combine all ingredients in bowl; mix well.

INGREDIENTS

250 ml water
500 ml dry white wine
1 stick celery, chopped
150 grams carrot, chopped
½ teaspoon black peppercorns
500 grams Atlantic salmon cutlets
500 grams potatoes, peeled pinch saffron strands
2 green shallots, chopped
2 cloves garlic, crushed
1 tablespoon drained capers, chopped
Plain flour
2 eggs, lightly beaten
50 grams packaged breadcrumbs
50 grams packaged ground almonds
50 grams butter
1 tablespoon peanut oil

Herb Mayonnaise

150 ml mayonnaise
50 ml thickened cream
1 teaspoon Dijon mustard
1 tablespoon chopped fresh parsley
1 tablespoon chopped fresh chives
