Preparation Method :
- Beat the eggs in a bowl with the parsley, dill, half of the Parmesan and Pecorino cheeses and the white wine.
- Adjust seasoning to taste with freshly ground black pepper.
- Heat the fat in a large frying pan and cook the salmon pieces for 3-5 minutes or until opaque.
- Add the spaghetti to the pan and immediately add the egg mixture. Remove from the heat and toss well.
- Stir in the remaining cheeses and the cooked pieces of salmon and toss again.
- Transfer into a warmed serving bowl. Garnish with sprigs of flat-leaf parsley and serve immediately.
INGREDIENTS
- 500 grams salmon fillet, skinned, cut into bite-sized pieces
- 3 medium eggs
- 400 grams spaghetti, cook as per packet instructions and drained
- 1 tablespoon freshly chopped parsley
- 50 grams freshly grated Parmesan cheese
- 50 grams freshly grated Pecorino cheese
- 1 tablespoon freshly chopped dill
- 2 tablespoon dry white wine
- Freshly ground black pepper
- 2 tablespoon butter
- 1½ teaspoon Cooking oil
- Flat-leaf parsley sprigs, to garnish
