Preparation Method :
- Preheat oven to 220°C/ 425°F/Gas Mark 7, just before cooking.
- Place the fillets on a large chopping board, skinned-side up and halve lengthways along the centre.
- Dot some of the chopped anchovies on each fillet, then roll up from the thickest end.
- Place the spinach in the base of an ovenproof dish.
- Arrange the tomatoes on top of the spinach. Arrange the rolled-up fillets standing up in the dish and pour over the cream.
- Place the ciabatta and rocket in a food processor and process until finely chopped, then stir in the grated Parmesan cheese.
- Sprinkle the topping over the fish and bake in the preheated oven for 10 minutes or until the fish is cooked and the topping is golden brown. Serve with freshly cooked pasta.
INGREDIENTS
- 750 grams plaice fillets, cleaned, skinned
- 500 grams spinach, rinsed, pour hot water and squeeze out excess water
- 150 grams firm tomatoes, sliced
- 250 ml double cream
- 4 anchovy fillets, finely chopped
- 5 slices of olive ciabatta bread
- 50 grams wild rocket
- 100 grams Parmesan cheese, grated
- Freshly cooked pasta, to serve
