GOUJONS OF PLAICE WITH TARTARE SAUCE

Preparation Method :

  • Lightly beat the egg in a shallow dish. Mix together the breadcrumbs, Parmesan cheese, seasoning and oregano on a large plate.
  • Coat the plaice strips in the beaten egg, drip back the excess into the dish, then dip the strips into the breadcrumbs until well coated.
  • Place the goujons on a baking sheet, cover and chill in the refrigerator for about half an hour.
  • The Tartar Sauce: Mix together all the ingredients in a bowl. Adjust seasoning to taste with salt and pepper.
  • Loosely cover the bowl and place it in the refrigerator until required.
  • Heat the oil into a large wok. Cook the plaice goujons in batches for about 3-5 minutes, turning occasionally, until golden.
  • Remove using a slotted spoon and drain on absorbent kitchen paper. Serve immediately with the tartar sauce and chips.

INGREDIENTS

  • 500 grams plaice fillets, cleaned and cut into thick strips
  • 50 grams freshly grated Parmesan cheese
  • 1 tablespoon dried oregano
  • 1 medium egg
  • Cooking oil for deep frying
  • 100 grams fresh white breadcrumbs
  • Salt and freshly ground black pepper, to taste
  • Fat chips, to serve

The Tartar Sauce

  • 250 ml prepared mayonnaise
  • 3 tablespoon capers, drained and chopped
  • 50 grams gherkins, finely chopped
  • 2 tablespoon freshly snipped chives
  • 1 garlic clove, peeled and crushed
  • Pinch of cayenne pepper
