- Lightly beat the egg in a shallow dish. Mix together the breadcrumbs, Parmesan cheese, seasoning and oregano on a large plate.
- Coat the plaice strips in the beaten egg, drip back the excess into the dish, then dip the strips into the breadcrumbs until well coated.
- Place the goujons on a baking sheet, cover and chill in the refrigerator for about half an hour.
- The Tartar Sauce: Mix together all the ingredients in a bowl. Adjust seasoning to taste with salt and pepper.
- Loosely cover the bowl and place it in the refrigerator until required.
- Heat the oil into a large wok. Cook the plaice goujons in batches for about 3-5 minutes, turning occasionally, until golden.
- Remove using a slotted spoon and drain on absorbent kitchen paper. Serve immediately with the tartar sauce and chips.

- Cooking oil for deep frying
- 100 grams fresh white breadcrumbs

- Fat chips, to serve
The Tartar Sauce
- 250 ml prepared mayonnaise
- 3 tablespoon capers, drained and chopped
- 50 grams gherkins, finely chopped
- 2 tablespoon freshly snipped chives
- 1 garlic clove, peeled and crushed
- Pinch of cayenne pepper
