Preparation Method :
- Put the fish fillets in a non-metallic dish. Mix the lime zest and juice, wine and garlic together and pour over the fish.
- Turn the fish and leave to marinate for 30 minutes, turning now and then. Meanwhile, cut the butter into cubes and return to the fridge.
- Transfer the fish to a plate. Strain the marinade through a sieve into a small saucepan.
- Bring the marinade to the boil and simmer until reduced to 2 tablespoons.
- Meanwhile, heat the oil in a large frying pan. When hot, add half of the fish and cook for 3-4 minutes, turning once, or until opaque and cooked through.
- Repeat with the rest of the fish and keep warm in a low oven.
- Over a low heat, whisk the butter, cube by cube, into the liquid left in the saucepan, whisking thoroughly after each addition.
- When half of the butter has been incorporated, a few cubes can be added at a time. Do not allow the sauce to overheat.
- When all the butter has been incorporated, season to taste. Serve the sauce with the fish, along with some steamed green beans.

- 200 grams unsalted butter, chilled
- 2 tablespoons Cooking oil
