- Place the cod fillets in a small, ovenproof dish, cover them with water at 180°C/350°F/ Gas Mark 4 for 45-50 minutes or until cooked.
- The Salsa: Mix all the ingredients together and seasoning well.
- Serve the fish with the salsa.
INGREDIENTS
- 250 grams frozen chunky cod fillets
- 2 tablespoons lemon juice
- 2-inch piece of cucumber, finely diced
- 3-4 spring onions, sliced finely
- Freshly ground black pepper, to taste
