Preparation Method :
- Heat the butter in a pan, add the flour and stir fry till golden brown. Remove from flame, pour in the milk and stir. Return to flame and add the egg yolks one-by-one.
- Add the mashed fish, adjust seasoning and blend thoroughly. Remove from flame and fold-in the stiffly beaten egg whites.
- Grease a souffle dish with little butter, pour in the fish mixture and then bake in a moderately hot oven for about 20-22 minutes.
- Serve hot.
INGREDIENTS
- 250 grams White flesh fish, cleaned, rinsed, boiled, deboned and mashed
- 400 ml Milk
- 50 grams Flour
- 50 grams Butter
- 6 Egg yolks
- 8 Egg whites
- Pepper and salt to taste
