SMOKED MACKEREL AND CREAM CHEESE PATE

Preparation Method :
- Cream the butter and cheese together, then stir in the flaked fish, lemon juice, chives and pepper to taste.
- Beat until the mixture is smooth.
- Divide the pate between 4 individual ramekins.
- Garnish each dish by pressing a bay leaf on to the top and serve with wholemeal toast.
INGREDIENTS
- 500 grams smoked mackerel fillets, skinned and flaked
- 250 grams full-fat soft cheese
- 1 tablespoon lemon juice
- 100 grams butter, softened
- 2 tablespoon snipped chives
- 4 small bay leaves, to garnish
- Pepper
- Wholemeal toast, to serve
