Preparation Method :
- Preheat the oven to 190°C/ 375°F/Gas Mark 5.
- Heat the oil in a large pan and cook the onion and garlic for about 3-5 minutes or until it soften.
- Add the pepper chunks and courgette slices cook for further 3-5 minutes.
- Pour in the chopped tomatoes with their juice and cook for a further 5 minutes.
- Adjust seasoning to taste with salt and pepper and pour into an ovenproof dish.
- Season the fish with salt and pepper and arrange on top of the vegetables. Spray with a little olive oil and lemon juice.
- Cover and cook in the preheated oven for about 15-20 minutes.
- Add the basil leaves and return to the oven for a further 3-5 minutes. Serve immediately with couscous.
INGREDIENTS
- 1 kg small mackerel, cleaned and heads removed
- 450 grams chopped tomatoes
- 1 red pepper, cut the top, deseeded and cut into chunks
- 1 red onion, peeled, cut into thick wedges
- 3 teaspoon cooking oil
- 1 garlic clove, peeled and thinly sliced
- 2 courgettes, trimmed and cut into thick slices
- Salt and freshly ground black pepper, to taste
- ½ teaspoon olive oil
- Lemon juice for drizzling
- 12 fresh basil leaves couscous, to serve
