HADDOCK WITH ORANGE SAUCE
Haddock with orange sauce – your ideal dish at all times! It is mixed with haddock steaks, plain flour, margarine, milk and other flavorings. With its orange sauce, the dish becomes more appetizing and tasty that truly fit to any events including daily meals.

Preparation Method :
- Place the fish steaks in a shallow pan, season with salt and pepper and add the milk.
- Bring gently to near boiling, then turn off the heat, cover and leave for 15 minutes.
- Remove fish with a slotted spoon and arrange on a serving dish. Keep hot.
- Strain the cooking liquid and reserve. Melt the butter or margarine in a pan, add the flour and cook for 1 minute, then gradually blend in the reserved milk.
- Cook the sauce, stirring, until thick. Grate rind of orange and stir into sauce with salt and pepper to taste. Pour the sauce over the fish.
- Cut away all the remaining skin and pith from the orange and slice the orange.
- Arrange the orange slices and parsley sprigs on the fish.
- Serve immediately.

- 1 kg haddock steaks
- Salt and freshly ground black pepper
- 300 ml milk
- 30 grams butter or margarine
- 2 tablespoon plain flour
- 2 orange parsley sprigs to garnish
