HADDOCK CHARLOTTE
Haddock Charlotte is such a wonderful dish because it contains sweet corn, haddock, parsley, mushrooms, salt, ground black pepper, whole meal bread and margarine! It looks so tempting not only because of its smell but as well as its taste!

Preparation Method :
- Cut the haddock into small pieces and arrange in a casserole or soufflé dish.
- Stir in the sweet corn, onion, mushrooms, parsley, stock or water, and salt and pepper to taste.
- Spread a little margarine on to the bread slices, cut into quarters and arrange on top of the fish mixture.
- Place in a preheated moderately hot oven and bake for 45 minutes or until the fish is cooked and the bread topping browned.
- Serve immediately.
INGREDIENTS
- 1 kg haddock
- 250 grams sweet corn, drained
- 2 large onion, peeled and chopped
- 100 grams button mushrooms, sliced
- 2 tablespoon chopped parsley
- 500 ml fish stock or water
- Salt
- Freshly ground black pepper
- 50 grams margarine
- 8 slices whole meal bread
