Preparation Method :
- Heat the oil in a large frying pan, add the chillies, garlic and ginger and fry gently for 3 minutes.
- Add the creamed coconut, when bubbling, add the fish pieces and adjust seasoning with salt. Stir well. Cook for 3-5 minutes, stirring.
- When the fish is cooked through, pour in the lemon juice, stir and serve.
INGREDIENTS
- 1 kg thick haddock fillets, skinned and cubed
- 100 grams creamed coconut
- 100 ml lemon juice
- 2 tablespoons Cooking oil
- 4-6 green chillies, deseeded and chopped
- 2-3 garlic cloves, finely chopped
- 1 inch piece fresh root ginger, finely chopped
- Salt, to taste
