SMOKED COD'S ROE MOUSSE

Preparation Method :
- Put the cod's roc into a blender or food processor with the cottage cheese, lemon rind, salt and pepper to taste and the olive oil; blend until smooth.
- Separate the yolks from the whites of the hard- boiled eggs; add the yolks to the cod's roe mixture and blend until smooth.
- Chop the egg whites finely; stir into the cod's roe mixture, along with the parsley. Cover and chill for 1 to 2 hours.
- Serve on small plates in neat scoops, accompanied by fingers of warm whole wheat toast.

- 100 grams cottage cheese
- Finely grated rind of 1 lemon

- Freshly ground black pepper
- 4 tablespoons olive oil
