FISH FILLETS WITH MUSHROOMS
These fish fillets with mushrooms are cooked with perfect ingredients. It is highly made with fresh fish fillets, butter, white wine and other seasonings. With its simple ingredients, you can easily have this without incurring a lot of time, money and effort.

- Wipe the fish fillets with kitchen paper towels. Lightly butter a flameproof dish, sprinkle in the chopped spring onions (scallions) and half the sliced mushrooms and arrange the fish on top.
- Cover with the remaining mushrooms and season with salt and pepper to taste. Pour over the water and wine. Cover with a sheet of buttered paper with a small hole in the centre.
- Bring the liquid to simmering point, cover and reduce the heat. Poach the fish for 8 to 10 minutes.
- Using a broad spatula, remove the fish and vegetables to a warmed serving plate and keep warm while making the sauce.
- Reduce the liquid in the pan to about 500 ml. Cream the butter and flour to a smooth paste and whisk into the liquid in small pieces.
- Add salt and pepper to taste and spoon the sauce over the fish.
- Serve with plain boiled potatoes.
