FILLETS OF SOLE WITH NOILLY PRAT

Preparation Method :
- Fillet of sole (or have your fishmonger fillet it).
- Clean and chop the shallots.
- Put the shallots, fillers of sole, Noilly Prat and concentrated fish stock (or water) into the pressure cooker. Add salt and pepper.
- Close and cook for 4 minutes from the pressure cooker hissing. When the cooking is over, remove the fillets of sole and keep them warm on the serving dish.
- Put the cream in the pressure cooker and reduce it for 5 minutes to obtain a thick sauce. Correct the seasoning.
- Pour the sauce over the fillets.
- Garnish with several sprigs of chervil.

- ½ bunch chervil
