SAFFRON FISH CAKES

Preparation Method :

Put the milk and saffron in a frying pan and heat until simmering. Add the fish, turn up the heat a little and cook until the fish turns opaque and flaky - you might need to turn it over halfway through.
Don't worry if it breaks up. Lift the fish out of the milk into a bowl and break it up roughly with a fork. Keep the milk.
Cook the potato and garlic in simmering water for about 12 minutes, or until the potato is tender. Drain the potato and return it to the pan.
Peel the garlic and add it to the potato, then mash together and strain in the saffron milk.
Keep mashing until smooth, then stir in the fish, flour, 1 teaspoon of the lemon zest, the parsley and cream. Season.
Shape the mixture into eight even-sized cakes and refrigerate.
Make the herbed créme fraîche by mixing together the créme fraîche, remaining lemon zest and herbs.
Heat the oil in a large non-stick frying pan and cook the fish cakes for 3 minutes on each side. Serve with the herbed créme fraîche.

2 garlic cloves, unpeeled
2 tablespoons plain (all-purpose) flour
2 teaspoons grated lemon zest
1 handful flat-leaf (Italian) parsley, finely chopped
2 tablespoons pouring (whipping) cream
4 tablespoons créme fraîche
2 tablespoons finely chopped Mint
2 tablespoons finely chopped flat-leaf (Italian) parsley, extra
100 ml IDHAYAM sesame oil
