FRIED CHILLI PRAWNS

Preparation Method :
- Heat a wok until hot. Add the oil and heat over a moderate heat until hot.
- Add the onion, ginger, garlic and chillies, stir-fry for about 2 minutes or until the onion is softened, take care not to brown.
- Add the prawns and stir-fry for about 2-3 minutes or until they turn pink.
- Add the tomatoes with tomato puree, wine vinegar, sugar and salt.
- Stir-fry another for 5 minutes or until the mixture is thick, take care not to let the cherry tomatoes lose their shape.
- Taste and adjust seasoning with salt if needed.
- Transfer to a warm dish, Garnish with coriander sprigs and serve immediately with noodles or rice.

- 500 grams raw king or tiger prawns, peeled
- 50 grams cherry tomatoes, halved
- 50 ml Cooking oil
- 50 grams onion, finely chopped
- 500grams tomato puree
- 1 tablespoon red wine vinegar
- 1 inch piece of fresh root ginger, finely chopped
- 2-3 garlic cloves, crushed
- Pinch of caster sugar
- Fresh chillies and salt to taste
- Coriander sprigs, to garnish
