DEEP-FRIED FISH WITH VEGETABLES

The deep fried with vegetables is mixed with healthy fresh herbs, light soy sauce, egg, corn flour, spice powder, oyster sauce, spring onion and other essential flavorings. Since it is combined with vegetables, this unique dish becomes more popular to health conscious individuals.

Preparation Method :

  • Cut the fish fillets into finger-sized pieces, discarding any bones. Mix the salt, five spice powder and corn flour in a large bag.
  • Pour the egg white over the fish and mix. Drop the fish pieces into the bag and shake well to coat. Dust off excess corn flour.
  • Heat the oil in a wok and fry the fish on a high heat-about one quarter at a time just until cooked through. This should take 1 to 2 minutes.
  • Remove with slotted spoon as drain on a paper towel; keep warm. Mix teaspoon of corn flour with cold water; set aside.
  • Pour off all but oil from the wok. Add the garlic, ginger and cabbage; stir fry for 1 minute.
  • Add the spring onions and stir-fry for 1 minute more. Push to the side of the wok.
  • Add the soy and oyster sauces and water; bring the liquid to the boil and add the corn flour mixture.
  • Stir until the sauce boils and thickens. Pour into a dish, arrange fish and serve immediately.

INGREDIENTS

  • 750 grams white fish fillets
  • 1 teaspoon salt
  • 2 teaspoons five-spice powder
  • 3 tablespoons corn flour
  • 1 egg white, slightly beaten
  • Cooking oil for frying
  • Extra teaspoon corn flour
  • 1 clove garlic, crushed
  • ½ teaspoon finely grated fresh ginger
  • 400 grams Chinese white cabbage, sliced
  • 6 spring onions, sliced in 5-cm (2-in) lengths
  • 1 tablespoon light soy sauce
  • 1 tablespoon oyster sauce
