CRISPY SESAME PRAWNS

Preparation Method :

  • Mix all the ingredients of the first marinade and rub on the prawns. Keep aside for about 20-30 minutes. Squeeze the prawns gently to remove excess moisture.
  • Whisk together the ingredients for the second marinade, except sesame seeds and breadcrumbs and marinate prawns in this mixture for another 30 minutes.
  • Make a mixture of breadcrumbs and sesame seeds. Coat the prawns with the mixture and chill for 20 minutes.
  • Heat oil in a wok or frying pan till it starts smoking. Lower heat, fry prawns for 2 minutes. Remove, drain and keep aside for 5 minutes.
  • Deep fry again till they are crisp and golden in color. Drain excess oil and serve hot, garnished with lemon wedges.

INGREDIENTS

  • 1 kg King prawns, shelled, deveined
  • Cooking oil for frying

For the first marinade

  • 4 teaspoon Ginger paste
  • 5 teaspoon Garlic paste
  • ½ teaspoon White pepper powder
  • ½ teaspoon Yellow chilli powder
  • 1 teaspoon Lemon juice

For the second marinade

  • 50 grams Cheddar cheese, grated
  • 1 tablespoon Carom seeds
  • 50 grams Cream
  • ½ teaspoon Green cardamom powder
  • ½ teaspoon Mace powder
  • 3 tablespoon Gram flour, roasted
  • 120 grams Yoghurt, drained
  • 50 grams Sesame seeds  
  • 100 grams Breadcrumbs dried, powdered
