Preparation Method :
- Dust the fish fillets in cornflour and deep-fry in oil. Keep aside.
- In a pan, heat oil and add the chopped garlic. Saute well and add the red chillies, kaffir lime leaves and fish stock.
- Stir in the fish sauce, sugar, soya sauce, basil and cornflour mixed with water until the mixture achieves a coating consistency.
- Pour the mixture over the fried fish fillets. Serve hot.
INGREDIENTS
- 6 fish fillets, cleaned
- 100 grams Cornflour
- Peanut oil for deep-frying
- 6 Garlic cloves 4, chopped
- 6 red chillies, chopped
- 8 Kaffir lime leaves
- 500 ml Fish stock
- 4 tablespoon Fish sauce
- 4 teaspoon Sugar
- 3 tablespoon Soya sauce
- 15 Basil leaves, fried
