Preparation Method :
- Melt the butter in a large saucepan and, when hot, add the onion and bacon.
- Cook over medium heat for about 5 minutes, or until the onion is soft and the bacon is cooked.
- Put the clams in a large saucepan with 3 tablespoons water and place over medium-high heat.
- Once the water is hot and the clams begin to steam, cover with a lid and cook for 2-3 minutes, or until they open.
- Discard any that have not opened. Strain the liquid through a sieve lined with muslin (cheesecloth) and reserve.
- Add the corn kernels to the onion and bacon and cook, stirring, for 3-4 minutes, or until tender.
- Pour in the cider and 3 tablespoons of the reserved clam cooking liquid.
- Bring to the boil, then simmer for 2 minutes. Stir in the cream, and season with salt and ground black pepper.
- Tip in the clams and toss them in the sauce. Serve in warmed deep bowls.
