BALTI SEAFOOD CURRY

Preparation Method :

  • Heat the oil in a large frying pan, add the onions, garlic and green pepper and fry until the onion turn soft but not brown.
  • Add in the tomatoes and sauté for about 2-3 minutes.
  • Add the curry powder, chilli powder and flour and cook gently for about 2 minutes.
  • Gradually add the hot water, stirring constantly. Bring the mixture to the boil.
  • Simmer to low flame, then add the white fish pieces and cook for about 5-7 minutes.
  • Add the cooked mussels and prawns to the pan, adjust seasoning with salt and pepper to taste.
  • Cook for a further 5-7 minutes. Garnish with strips of chilli and serve with steamed rice.

INGREDIENTS

  • 500 grams white fish fillets, skinned and cubed
  • 150 grams cooked shelled mussels
  • 500 ml hot water
  • 150 grams cooked peeled prawns
  • 150 grams onions, finely chopped
  • 250 grams tomatoes, skinned, quartered and deseeded
  • 1 green pepper, cored, deseeded and sliced
  • 2 tablespoons cooking oil
  • 2-3 garlic cloves, crushed
  • 2 tablespoons curry powder
  • 1 tablespoon chilli powder
  • 30 grams plain flour
  • Salt and pepper, to taste
  • Red chillies cut into thin strips, to garnish
  • Steamed rice, to serve
