STEAMED TUNA CURRY IN BANANA LEAVES

Preparation Method :

  • Marinate the tuna steaks in a shallow, glass dish and pour over the lime juice. Cover and set aside to.
  • Lay the pieces of banana leaf on a flat surface. Remove the tuna from the lime juice and place a steak in the centre of each banana leaf.
  • Cover the fish completely with the green curry paste. Wrap up the banana leaves to enclose the fish, and secure with cocktail sticks.
  • Steam the fish for about 15-20 minutes or until the fish flakes.
  • Garnish the steamed fish with lime wedges and chilli rings.

INGREDIENTS

  • 750 grams fresh tuna steaks
  • Juice of 1 lime
  • 4 large pieces banana leaf
  • Lime wedges, to garnish
  • Fine strips of lemon rind, to garnish
  • 1 red chilli, cut into rings

Green curry paste

  • 90 grams desiccated coconut
  • 50 ml malt vinegar
  • 25 grams fresh mint leaves
  • 1 tablespoon cumin seeds
  • 1 tablespoon caster sugar
  • 2 tablespoons coriander seeds
  • 3-4 large green chillies, deseeded and chopped
  • 2 inch piece fresh root ginger, grated
  • 4 garlic cloves, crushed
  • Salt, to taste
