SALMON COCONUT CURRY

Preparation Method :

  • Heat the oil in a wok or large open pan. Add the onion, garlic, chilli and ginger, then stir in the turmeric, paprika and cumin. Cook over a gentle heat for 2 minutes, stirring occasionally.
  • Increase the heat and add the salmon. Stir gently, until the salmon is coated in the spices and sealed on all sides.
  • Add the coconut cream and tomatoes, and season to taste with lemon juice, salt and pepper.
  • Reduce the heat and leave to simmer for 3 minutes.
  • Meanwhile, cook the noodles in plenty of boiling water for 3 minutes or according to packet instructions. Drain well
  • Spoon the curry over the noodles and serve immediately, garnished with the chopped coriander. 

INGREDIENTS

  • 2 tablespoon sesame oil
  • 2 onions, chopped
  • 2 garlic clove, chopped
  • 2 fresh green chilli, seeded and chopped
  • 1 inch piece root ginger, chopped
  • 2 teaspoon turmeric
  • 2 teaspoon paprika
  • Pinch of ground cumin
  • 750 grams salmon, diced
  • 150 ml coconut milk
  • 300 grams canned chopped tomatoes
  • Juice of 1 lemon
  • Salt and freshly ground black pepper
  • 250 grams rice thread noodles
  • 4 tablespoon chopped fresh coriander
