SALMON COCONUT CURRY

Preparation Method :
- Heat the oil in a wok or large open pan. Add the onion, garlic, chilli and ginger, then stir in the turmeric, paprika and cumin. Cook over a gentle heat for 2 minutes, stirring occasionally.
- Increase the heat and add the salmon. Stir gently, until the salmon is coated in the spices and sealed on all sides.
- Add the coconut cream and tomatoes, and season to taste with lemon juice, salt and pepper.
- Reduce the heat and leave to simmer for 3 minutes.
- Meanwhile, cook the noodles in plenty of boiling water for 3 minutes or according to packet instructions. Drain well
- Spoon the curry over the noodles and serve immediately, garnished with the chopped coriander.

- 1 inch piece root ginger, chopped

- 750 grams salmon, diced
- 150 ml coconut milk
- 300 grams canned chopped tomatoes
- Juice of 1 lemon
- Salt and freshly ground black pepper
- 250 grams rice thread noodles
- 4 tablespoon chopped fresh coriander
