FISH MOLEE

Serves :

Preparation Time :
10 minutes

Cooking Time :
15 minutes

Preparation Method :

  • Rub the fish fillets with the turmeric and salt and set aside.
  • Curry Sauce: Heat the fat in a large pan. Add the onion, garlic and ginger, fry for about 2-3 minutes or until softened.
  • Stir in the curry powder and chillies and cook, stirring constantly, for a further 2 minutes.
  • Add the coconut milk and bring to the boil, stirring constantly. Simmer to low flame for about 5-7 minutes or until the sauce has thickened slightly.
  • Add the fish and cook gently for a further 5 minutes or until the fish flakes. Taste and adjust the seasoning. Serve hot.

INGREDIENTS

  • 750 grams cod fillets
  • 500 ml thick coconut milk
  • 2 tablespoons cooking oil
  • 1 onion, finely chopped
  • 3 teaspoon curry powder
  • 3-4 garlic cloves, crushed
  • 1 tablespoon freshly grated root ginger
  • ½ teaspoon turmeric
  • 2-3 fresh red chillies, quartered lengthways and deseeded
  • Salt, to taste
