FISH IN SPICED YOGURT

- Wash the fillets, dry and cut into large chunks, removing any bones. Combine the pepper and turmeric and rub over the fish.
- Heat the oil for shallow frying. Seal the fish qui both sides over a high heat. Transfer to a plate.
- Puree the onions, garlic, ginger, almonds and spices in a blender, adding a little water if necessary to keep the mixture moving.
- Drain all but oil from the pan and fry the puree, stirring constantly, until the color changes and it smells fragrant.
- Swirl water in a blender to catch any traces of spices, stir into the yogurt and add.
- Simmer for a few minutes. Return fish pieces, turning gently to coat with sauce.
- Add salt to taste. Simmer, covered, for 10 minutes.
- Serve hot sprinkled with chopped mint and accompanied by rice.

- 125 ml plain yoghurt
- 1 tablespoon chopped fresh mint leaves
- 2 cloves garlic
- 3 teaspoons chopped fresh ginger
