CORIANDER-FLAVOURED POMFRETS

Preparation Method :

  • Clean the pomfrets, debone; make slight slashes.
  • or the filling, mix all the ingredients and smear on the inside and outside of the pomfrets.
  • Heat oil in a pan. Lightly fry the pomfrets on both sides and place on a wide-bottomed oven-proof dish.
  • For the curry, whisk all the ingredients in yoghurt and pour over the fish. Cover and bake for 10 - 15 minutes.
  • Serve hot.

INGREDIENTS

  • 250 grams Pomfrets
  • 220 grams Green coriander, chopped
  • 4 Green chillies, deseeded, chopped
  • 2 teaspoon Ginger  long, thin strips
  • Garlic 10 Cloves, crushed
  • Salt to taste
  • 2 tablespoon Lemon juice
  • Cooking oil

For the curry

  • 500 grams Yoghurt  
  • 4 tablespoon Coriander seeds, broiled, pounded
  • 5 teaspoon Ginger, chopped
  • 225 grams Coconut  cream
  • 5 teaspoon Onion paste  
  • 5 Green cardamoms, crushed
  • 4 Bay leaves  
  • 1 tablespoon Peppercorns, crushed
  • 4 Green chillies, slit
  • 1 Lemon
  • Salt
