Preparation Method :
- In a large heavy-based saucepan, fry the onion in the oil until golden brown.
- Add the cinnamon, bay leaf and the ginger and garlic pastes and fry for 1 minute.
- Add the ground spices and fry for a further minute, then stir in yogurt and canned tomatoes and the chopped chillies and coriander leaves.
- Stir in water and simmer the mixture for 5 minutes. Stir the cod into the sauce, and add the salt. Cover the pan and simmer for 20 minutes before serving.

- 5 tablespoons sesame oil
- 2 large onion, peeled and chopped
- 1-inch piece cinnamon stick
- 2 bay leaf
- 2 teaspoon ginger paste
- 2 teaspoon garlic paste
- 2 teaspoon chilli powder
- 2 teaspoon ground cumin
- 2 teaspoon ground coriander
- ½ teaspoon ground turmeric
- 150 ml natural yogurt
- 300 grams tomatoes, chopped
- 4 fresh green chillies, chopped
- 3 sprigs fresh coriander leaves, chopped
- 2 teaspoon salt
- 500 grams cod cutlets, cut into pieces
