NORMANDY STUFFED CRAB

This seafood dish is ideal for all health-conscious. It is made up of nutritious ingredients like crab, butter, white bread crumbs, dry cider and other flavorings. The Normandy stuffed crab is easy to prepare and serve for all occasions and events.

Preparation Method :

  • Twist off the crab legs and claws, crack them open and remove the meat with pincers or a skewer. Pull the body of the crab away from its shell and take out all the meat.
  • Discard the stomach sac, the pale grey fronds ('dead men's fingers') and any greenish matter. Scoop out the dark meat with a teaspoon. Flake all the extracted crabmeat and remove any cartilage. Thoroughly scrub inside of shell and reserve.
  • Melt 40 grams of  butter in a pan, add the shallots and onion and fry gently until translucent.
  • Add the crab meat, garlic, parsley, 40 grams  breadcrumbs and salt and pepper to taste.
  • Add the cider and cook gently for 10 minutes, then stuff the mixture inside the cleaned crab shell. Sprinkle with remaining breadcrumbs and dot with remaining butter.
  • Bake in a preheated hot oven (220°C/425°F, Gas Mark 7) for 10 minutes.
  • Serve hot, straight from the shell, with Beans with Poulette Sauce.

  • 2 dressed crab 
  • 150 grams butter
  • 4 shallots, peeled and finely chopped
  • 2 small onion, peeled and finely chopped 
  • 2 clove garlic, peeled and crushed 
  • 2 tablespoon chopped parsley 
  • 100 grams fresh white breadcrumbs
  • Salt
  • Freshly ground pepper 
  • 8 tablespoons dry cider
