TARRAGON MAYONNAISE

Preparation Method :

  • Shake off the excess liquid from the capers and the pickled gherkins and chop them finely.
  • Fold the capers, the pickled gherkins and the tarragon into the mayonnaise and salt and pepper to taste. Keep in a cold place until using. 
  • Mayonnaise: Whisk the egg yolks together with some salt and pepper. Slowly add the vinegar and keep whisking.
  • Add the oil drop by drop to the egg yolk mixture and keep whisking.

INGREDIENTS

  • 500 ml oil
  • 1 tablespoon tarragon vinegar
  • 1 tablespoon capers
  • 3 pickled gherkins
  • 3 egg yolks
  • Salt and pepper, to taste
  • 1 bunch of tarragon, washed, dried and finely chopped
