- To make the sauce, heat oil in a pan. Add chilies, ginger, garlic and onion. Fry until tender.
 - Add sherry, sugar, tomato sauce and vinegar, and simmer 10-15 minutes.
 - Stir in shallot greens and serve.
 - Stir-Fried Bean Curd with Szechuan Sauce.
