- Chop the onion and simmer in salted water to cover until tender. Drain, reserving the liquid.
- Melt the butter in a pan, remove from the heat and stir in the flour. Return to a low heat and stir for 1 minute.
- Blend in the milk and 2 tablespoons of the cooking liquid. Season with salt, pepper and nutmeg to taste.
- Stir until boiling and thickening, and then add the onion.
- Serve with meats or vegetables.
