Preparation Method :
- Place all the ingredients in a dish, toss the ribs in and refrigerate for a day, turning the ribs every 5 hours.
 - Remove the ribs from the marinade and barbecue till its cooked.
 - Place the marinade in a saucepan and then heat.
 - Thicken it with little corn flour and pour it over the ribs.
 - Let the sauce coat the ribs for 15 minutes then quickly barbecue until reddish - brown and sizzling.

 - 3 garlic cloves, peeled and finely chopped
 - 3 shallots, peeled and finely chopped
 - 2 tablespoons balsamic vinegar
 - 3 tablespoons tomato ketchup
 - 4 tablespoons black peppercorns, crushed
 - 2 tablespoons Worcester sauce
 - 2 teaspoons chopped fresh red chillies
 - 4 tablespoons Tabasco sauce
