BUERRE BLANC TOMATE

Preparation Method :

  • Drop the spring onions and wine in a saucepan and bring to the boil. Reduce heat and simmer until liquid has been reduced to half.
  • Cook over low heat, stirring, add one piece of butter at a time. Season to taste with salt and set it aside.
  • Heat a little butter in a clean saucepan, add tomato and green peppercorns and heat through.
  • Add tomato mixture to sauce, stir to combine and serve.

INGREDIENTS

  • 350 ml dry white wine
  • 4 tablespoons finely chopped spring onions
  • 150 grams butter, cut into large dice 
  • 1 tomato, peeled, seeded and diced
  • 6 green peppercorns
  • Salt, to taste
